Spice up your salads with this amazing Greek salad with Hummus Dressing.  Laura Lea Goldberg of Laura Lea Balanced brings her Greek salad to life with this three ingredient dressing. Do your kids love to dip their veggies in hummus? This familiar flavor will shine through and they’ll be eager to finish every last bite of salad. Your little ones can think of it like a snack at dinner! If you want to make this Greek salad for the main course, you can add some grilled chicken to make it a meal! Check out the recipe below:

Greek Salad with Hummus Dressing

INGREDIENTS FOR SALAD:

1 pint organic cherry tomatoes, sliced in half

1 large cucumber, peeled & sliced into half-moons

1 tbsp balsamic vinegar

1 tsp dried basil

1 tsp dried oregano

1/4 tsp sea salt

1/4 teaspoon black pepper

1/4 tsp onion powder

12 oz organic romaine, sliced into 1/2 inch ribbons

1 C olives, sliced in half (black or green)

1/4 toasted pine nuts (sub 1/2 cup any nuts or 1/4 cup any seeds)

4 oz feta cheese, crumbled

 

INGREDIENTS FOR HUMMUS DRESSING

1/2 C plain or garlic hummus

1/4 cup balsamic vinegar

2 tablespoons tahini

1/2 cup water
