The holidays are a busy time and cooking for Passover can be tricky. We love this Passover recipe, a take on a fun dessert: Icebox Matzo Cake. It’s easy to make with your kids and a hit for guests young and old alike. The best part? It’s a no-bake recipe. In thirty minutes, you’ll have a delicious addition to your Passover Seder.

INGREDIENTS:

For the Chocolate Cream:

1 cup butter (2 sticks) melted

1 cup sugar

2 eggs

6 oz semi-sweet chocolate

1 teaspoon rum extract (optional)

1 teaspoon milk or soy milk

1 teaspoon prepared coffee

For assembly:

1 1/2 boxes Matzos

2 cups Kosher wine or grape juice placed in a shallow dish
