Mealtime Monday: Passover Icebox Cake

We recently kicked off a new series you will see regularly on our blog and on Instagram  featuring recipes for you and your little ones. We know that motherhood has its set of challenges, but cooking shouldn’t be one of them! Follow our blog for more recipes that are great for the whole family!

The holidays are a busy time and cooking for Passover can be tricky. We love this Passover recipe, a take on a fun dessert: Icebox Matzo Cake. It’s easy to make with your kids and a hit for guests young and old alike. The best part? It’s a no-bake recipe. In thirty minutes, you’ll have a delicious addition to your Passover Seder.
INGREDIENTS:
For the Chocolate Cream:
1 cup butter (2 sticks) melted
1 cup sugar
2 eggs
6 oz semi-sweet chocolate
1 teaspoon rum extract (optional)
1 teaspoon milk or soy milk
1 teaspoon prepared coffee
For assembly:
1 1/2 boxes Matzos
2 cups Kosher wine or grape juice placed in a shallow dish
