If you ever thought to leave pizza to the pros, think again. This recipe, courtesy of Laura Lea of Laura Lea Balanced, gives you the tools to make a great meal instead of waiting for delivery. Her Skillet Pizza Chicken uses pantry staples to wow your tastebuds. It’s a dish you can get creative with and also sneak in some protein for the little ones! Skillet Pizza Chicken

INGREDIENTS:

1 tsp freshly minced rosemary (optional)

1 tsp dried oregano

1 1/2 tsp dried basil

1/4 tsp black pepper

1 1/4 tsp sea salt, to taste

1 C full-fat or light canned coconut milk

1 15-oz can organic diced tomatoes

1/4 C tomato paste

2 tbsp coconut sugar (sub honey or maple syrup)

1 tbsp low-sodium Tamari (sub soy sauce)

1 C low-sodium chicken stock

1 C yellow onion

5 cloves garlic

2 lbs boneless skinless chicken breasts

1 tbsp olive olive

1 tbsp butter (sub olive oil)

1 tbsp arrowroot or corn starch

Optional: 2 oz pepperoni slices, 2 oz grated mozarella, fresh basil, red pepper flakes
