1. VEGETABLE SIDE DISH: Roasted Asparagus with Feta and Pistachios 

INGREDIENTS

  • 1/4 cup olive oil
  • 4 cloves garlic, pressed
  • Zest from 1 lemon
  • 1 teaspoon oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup pistachios, shelled and unsalted
  • 1 lb. asparagus, ends trimmed
  • 1/4 cup feta cheese
  • Juice from 1 lemon

2. SALAD:  Summer Tomato and Grilled Corn Salad

INGREDIENTS

  • 3 ears of corn, shucked
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 2 tablespoons chopped basil, packed
  • 2 tablespoons chopped mint, packed
  • 2 lbs. very ripe tomatoes, thickly sliced
  • Optional: Macedonian feta cheese (omit for vegan), extra mint and basil and some balsamic reduction, for garnish

3. APPETIZER: Watermelon Caprese with Balsamic Glaze

INGREDIENTS

  • 1/2 red seedless watermelon, sliced 1/2 inch thick (calculated with 16 oz)
  • 8 thin slices fresh mozzarella (1 oz each)
  • 1 loose cup baby arugula
  • 2 tsp extra virgin olive oil
  • kosher salt
  • 2 tbsp balsamic glaze

4. DESSERT:  Red, White and Blue Ice Cream Granola Parfaits

INGREDIENTS

  • 4 cups fresh berries (I used a combination of blueberries, strawberries and raspberries, but blackberries would work great, too)
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons sugar
  • 1 quart good-quality vanilla ice cream
  • 1-2 cups granola

5. ALCOHOLIC BEVERAGE:  Strawberry Mojito Sangria

INGREDIENTS

  • 8 large mint sprigs, plus 12 for garnish
  • 3/4 cup lime juice (about 1 medium lime)
  • 1/2 cup agave syrup
  • 8 cups sauvignon blanc
  • 1/2 cup peaches, sliced
  • 10 strawberries, sliced
  • 1/2 cup lemon-lime seltzer
  • 12 lime wheels, for garnish

6. NON-ALCOHOLIC BEVERAGE:  Star Spangled Fruit Infused Water

INGREDIENTS

  • 1 small seedless watermelon
  • 1 pint blueberries
  • 1 pint strawberries
