Mealtime Monday: One Pan Chicken Teriyaki Rice Bowls

Weeknights are crazy and that’s why we love one pan meals.You don’t need to be an Iron Chef to tackle a new dish, and if stir-fry is something you’ve never tried to make before, have no fear. This dish, courtesy of Favorite Family Recipes, takes Chicken Teriyaki and simplifies it. These rice bowls are great because with protein, starch and veggies all in one pan, there’s no need for side dishes! These rice bowls also keep well and are great for lunch the next day. You can get creative with your rice bowl components, we think shallots or snow peas would be delicious additions. All you’ll need is one pan and the ingredients (and then some) below! One Pan Chicken Teriyaki Rice Bowls

INGREDIENTS:

1 lb. chicken, cut into 1″ pieces

3 Tbsp. teriyaki sauce

2 c. uncooked white, long-grain rice

3 1/2 c. water

Kosher salt, to taste

1/4 c. teriyaki sauce

3 Tbsp. soy sauce

1/2 c. carrots, chopped

1/3 c. green onion, chopped

1/3 c. peas (optional)

1 c. broccoli, chopped

Teriyaki Sauce, to taste
