Rocky Road Pie
INGREDIENTS

• 1 graham cracker crust
• 12 oz. cream cheese, softened
• 1/2 c. granulated sugar
• 1/4 cup brown sugar
• 2 tbsp. cocoa powder
• 1/2 c. chocolate chips, melted (plus more for drizzling)
• pinch of salt
• 1 1/2 c. heavy cream
• 1 1/2 c. mini marshmallows
• 1/2 c. chopped almonds

Watermelon Grill with Fruit Kabobs
INGREDIENTS

• 1 round watermelon
• 3 celery stalks (soak in cold water in the refrigerator overnight to stiffen)
• Blackberries (for the “charcoal”)
• Assorted fruits for kebabs
• Small cucumber or zucchini
• Wooden skewers
• Toothpicks

Hot Off the Grill Cupcakes
INGREDIENTS

• 2 dozen cupcakes (or brownies, as the original idea suggests)
• 1 can store-bought chocolate frosting (omit if using brownies)
• orange icing sugar
• 72 pieces Hot Tamales candy
• black royal icing (piping consistency)

Best Summer Berry Trifle
INGREDIENTS

• 3/4 cup (8 oz) seedless raspberry jam
• 1 quart (1-1/2 pounds) strawberries, hulled and cut into 1/4-inch slices
• 1 pint (12 oz) raspberries
• 1 pint (12 oz) blueberries
• 16 ounces cream cheese (preferably Philadelphia brand), at room temperature
• 1-3/4 cups confectioners’ sugar
• 1-1/2 cups heavy whipping cream, cold
• 1 teaspoon vanilla extract
• 1 (7 oz) package crisp lady fingers (also called savoiardi biscuits)
• Fresh mint spring, for garnish (optional)
