Mealtime Monday: Fourth of July

With Fourth of July right around the corner, we chose to focus this week’s Mealtime Monday on a simple three course meal fit for any festive barbecue. Check out these delicious dishes below and try them for yourself this holiday!
 

TOMATO CUCUMBER PASTA SALAD WITH AVOCADO 
INGREDIENTS
Dill and Garlic Vinaigrette:

  • 3/4 cup extra-virgin olive oil
  • 6 tablespoons red wine vinegar
  • 2 teaspoons sugar
  • 1 large clove garlic, minced (about 2 teaspoons)
  • 1 1/2 tablespoons fresh dill, minced
  • 1 1/2 teaspoons dried oregano
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste

Pasta Salad:

  • 1/2 pound pasta (spiral, bow-tie, or your favorite shape)
  • 1 pound tomatoes (cherry or grape tomatoes, cut in half, or about 3 large tomatoes, seeded & chopped)
  • 1 pound cucumbers (approximately 2 large or 4 small), diced
  • 1/2 cup Kalamata olives, drained, pitted, & sliced
  • 1/2 cup feta cheese, crumbled
  • 2 to 3 avocados, diced
  • 2 tablespoons fresh dill, for garnish

BEEF SLIDERS WITH PICKLED ONIONS
INGREDIENTS
Pickled Red Onions:

  • 1 large red onion
  • 1 cup rice vinegar
  • 1 cup water
  • 1½ tablespoons Mexican oregano
  • 2 tablespoons brown sugar
  • 2 tablespoons kosher salt
  • For the sauce:
  • 1 cup mayo
  • 1 small (or half) jalapeño
  • 2 tablespoons chopped yellow onion

Burgers:

  • 1 pound lean ground beef
  • salt & pepper
  • Monterey jack cheese slices, cut into 2″ squares (if desired)
  • 6 dinner-size rolls
  • softened butter
  • lettuce and tomato for garnish

BROWNIE FLAG
INGREDIENTS

  • 12 tablespoons butter
  • 1 1/2 cups sugar
  • 2/3 cup unsweetened cocoa powder
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup mini chocolate chips
  • 1 cup fresh blueberries
  • 2 cups sliced strawberries
  • 2 (16-ounce) containers white frosting
