Mealtime Monday: Chocolate Cookies

Chocolate lovers rejoice! This Mealtime Monday is dedicated to your sweet tooth and it’s absolutely mouth watering. We rounded up the best chocolate cookie recipes and all three of them are the perfect excuse to celebrate National Chocolate Chip Cookie Day with your little ones! 

BROWNIE COOKIES
INGREDIENTS

  • 12 oz. bittersweet chocolate chips 60-70% cacao
  • 1/2 c. butter
  • 3 large eggs
  • 1 c. granulated sugar
  • 1/4 c. brown sugar
  • 1 T. vanilla extract
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. all-purpose flour
  • 1/4 c. unsweetened cocoa powder, not Dutch processed
  • 1 c. pecans chopped (optional)
  • 1/2 c. mini semisweet chocolate chips

CHOCOLATE CHIP COOKIES
INGREDIENTS

  • 1 1/2 cups all-purpose flour see notes below
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 cup firmly packed light brown sugar
  • 6 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups semisweet chocolate chips

DOUBLE CHOCOLATE PEANUT BUTTER COOKIE DOUGH SANDWICH COOKIES
INGREDIENTS
For The Cookies:

  • 2 cups unbleached all-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 1/4 cups dark brown sugar
  • 1/2 cup granulated white sugar
  • 1 large egg + 1 egg yolk, room temperature
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 1 cup semi-sweet chocolate chips

For The Cookie Dough Filling:

  • 2 cups unbleached all-purpose flour
  • 1 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup granulated white sugar
  • 1/2 cup natural-style peanut butter
  • 10 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1/4 cup whole milk
  • 1 cup semi-sweet chocolate chips
