Mealtime Monday: Back To School Breakfast Recipes

School is back in session, which means your mornings just got a whole lot more hectic. We rounded up three easy back to school breakfast recipes that will leave you stress-free and your child energized. Check out the recipes below. 

WISE OWL FRUITY TOAST
INGREDIENTS

  • 1 wholemeal English breakfast muffin
  • 1 tbsp. of peanut butter
  • 1 small banana
  • 2 sliced strawberries
  • Handful of blueberries

HEALTHY BANANA PANCAKES
INGREDIENTS

  • 1 very ripe banana, mashed
  • 2 eggs
  • 1/4 teaspoon cinnamon
  • Optional (but highly recommended): 1/8 teaspoon salt

EASY BREAKFAST MUFFINS
INGREDIENTS
Hash Brown Crust:

  • 1 20 oz. bag Simply Potatoes shredded hash browns (or frozen, thawed and strained)
  • 1egg
  • 1/3 cup shredded or Mexican blend cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dried parsley
  • 3 cloves minced garlic
  • 1/4 tsp smoked paprika
  • 1 Tsp olive oil

Egg Mixture:

  • 12 eggs
  • 1/2 cup milk
  • 1 cup shredded Mexican blend (or your other favorite) cheese
  • 12 slices crispy bacon cut up into bite-size pieces
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tsp dried parsley
