Wednesday is National Taco Day and we’ve come prepared. To celebrate, we rounded up three diverse taco recipes to make with your loved ones and they all taste just as delicious as they look.

CHILI LIME CHICKEN TACOS

INGREDIENTS

  • Soft taco flour tortillas
  • 1 – 1 1/2 lb. chicken breasts
  • 1/4 c. lime juice, divided
  • 2 tbsp. canola or vegetable oil
  • 1 tsp. minced jalapeno
  • 1 tsp. honey
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/2 tsp. paprika
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cumin
  • 1/4 tsp. coriander
  • 1/4 tsp. cayenne pepper
  • 1/4 tsp. ground black pepper

For The Filling:

  • 2 tsp. olive oil
  • 2 tbsp. chopped red onion
  • 1/2 c. frozen corn
  • 1/2 c. black beans, rinsed
  • 1/4 tsp. salt
  • pinch ground black pepper

Optional Garnishes:

  • Chopped fresh cilantro
  • Avocado chunks
  • Avocado dressing
  • Lime wedges

TILAPIA FISH TACOS WITH TROPICAL SALSA

INGREDIENTS

  • 1 pound of tilapia fillets
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons chili powder
  • Salt and pepper to taste
  • 1 cup of shredded purple cabbage
  • 1 avocado thinly sliced
  • 1 cup of finely diced tropical fruit such as mango, pineapple, papaya or a combination
  • 1/4 cup finely diced red bell pepper
  • 2 tablespoons finely chopped cilantro
  • The juice of 1 lime
  • 6 corn tortillas

HONEY LIME STEAK TACOS WITH AVOCADO CREMA

INGREDIENTS

  • 1 1/2 Ib. flank steak
  • tortillas
  • cilantro (for garnish, optional)

For Lime Slaw:

  • 4 cups sliced cabbage or slaw mix (I used a bagged mix of red and green cabbage with carrots)
  • 1/2 jalapeno, diced (more or less to taste)
  • 1 tablespoon lime juice
  • pinch of salt

For Honey Lime Marinade:

  • 1/4 cup olive oil
  • 1/4 cup honey
  • zest and juice of one lime
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/4 teaspoon red chili flakes
  • 1/2 teaspoon kosher salt

For Avocado Crema:

  • 1 medium avocado
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1/4 teaspoon kosher salt
