Mealtime Monday: Apple Dishes

An apple a day keeps the doctor away, so we decided to honor fall with all things apple. We rounded up recipes for a delicious, apple-filled three course meal and it’s well worth the preparation. 

BRUSSELS SPROUT SALAD WITH APPLES AND CANDIED WALNUTS
INGREDIENTS
For the Salad:

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 pound Brussels sprout, quartered
  • 1 big tart apple, sliced
  • Salt and fresh ground pepper, to taste
  • 1 teaspoon fresh rosemary

For the Walnuts:

  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 1/4 cup chopped walnuts

SLOW COOKER APPLE CIDER MAPLE MEATBALLS
INGREDIENTS

  • 50 Daily Chef – Casa Di Bertacchi Meatballs (or your favorite frozen meatballs)
  • 2 cups apple cider
  • ½ cup maple syrup
  • 3 tbsp. apple cider vinegar
  • 2 apples, cored and chopped

APPLE CRISP
INGREDIENTS
For the Crumb Topping:

  • 1/2 cup flour
  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • A dash of salt
  • 1/3 cup unsalted butter diced into small chunks

For the Apple filling:

  • 3-4 large Granny Smith apples peeled and sliced thin
  • 3 Tbsp. butter melted
  • 2 Tbsp. flour
  • 1 Tbsp. lemon juice
  • 3 Tbsp. milk
  • 1/2 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • A dash of salt
