Mealtime Monday: Pasta Recipes for National Pasta Day (October 17)

Tuesday’s National Pasta Day and there’s no better way to celebrate than with a hardy helping of homemade pasta. We rounded up some of the easiest, and most delicious, pasta recipes for you and your family. 

CHICKEN FAJITA PASTA
INGREDIENTS

  • 1 lb. boneless skinless chicken breasts, towel dried, and cut into bite-size portions
  • 3 TB fajita seasoning (homemade or store bought packet), divided in half
  • 4 TB olive oil, divided
  • 1 medium onion (yellow or red) diced
  • 2 bell peppers (any colors) seeded and diced
  • 5 cloves fresh garlic, minced
  • 2 1/2 cups low sodium chicken broth
  • 1 can (10 oz.) fire-roasted tomatoes with juices
  • 8 oz. dry penne pasta
  • Freshly ground black pepper, to taste

CHICKEN BROCOLLI ALFREDO
INGREDIENTS

  • 10 ounces broccoli
  • 8 ounces penne pasta (for gluten free, use gf brown rice penne)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 1/2 pounds chicken breast (1 large chicken breast)
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 and 1/4 cups mozzarella cheese or Monterey jack cheese, shredded
  • salt and pepper, to taste

RICOTTA STUFFED SHELLS
INGREDIENTS

  • 1 (12 oz.) package of jumbo shell pasta (you will need 30 shells out of a 45 shell package)
  • 1 lb. of ground beef
  • 1/2 of an onion chopped
  • 1 (45 oz.) jar of Prego pasta sauce (that is the large jar)
  • 1 (15 oz.) container of ricotta cheese
  • 4 cups of mozzarella cheese
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
