Mealtime Monday: Pumpkin Dishes

Get in the fall spirit with some delicious pumpkin dishes. We rounded up an easy three course meal, incorporating all things pumpkin, that’s perfect for the whole family. 

PUMPKIN SOUP
INGREDIENTS

  • 2 lb. pumpkin chopped into large chunks (remove skin and seeds)
  • 2 medium onions, sliced
  • 2 cloves of garlic
  • 3 cups chicken or vegetable stock
  • 1 cup milk
  • Salt and pepper

PUMPKIN RICOTTA GNOCCHI
INGREDIENTS

  • 1 cup of puréed cooked pumpkin or winter squash (canned or homemade)
  • 1 cup ricotta (use whole milk for best results)
  • 2 large eggs
  • 2 teaspoons kosher salt
  • 1/4 cup parmesan or pecorino cheese
  • 3-4 cups cake flour, Italian “oo” flour, or all-purpose flour
  • 2-3 teaspoons minced fresh sage
  • 1/4 cup unsalted butter
  • Black pepper to taste
  • Truffle salt to taste (optional)

CHOCOLATE CHIP PUMPKIN BARS
INGREDIENTS

  • 2 cups flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup canned pumpkin puree
  • 1 1/2 cups chocolate chips
