Mealtime Monday: Chili Recipes

We rounded up some unique chili recipes that are perfect for your family this winter. So what are you waiting for? Bundle up, turn on some football and get  cooking–you’re in for a treat!

HOMESTYLE CHILI
INGREDIENTS

  • 2 lbs. ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons chili powder
  • 1 teaspoon dried mustard
  • 1 teaspoon crushed red pepper (or more to taste)
  • 1½ tablespoons cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 1 (4.5 oz.) can green chilies, chopped
  • 1 (28 oz.) can diced tomatoes
  • 1 (6 oz.) can tomato paste
  • 4 cups water
  • 2 cans kidney beans, undrained
  • 1 can pinto beans, drained
  • Toppings of choice: shredded cheese, onions, jalapenos, sour cream, etc.

CROCKPOT CHICKEN ENCHILADA CHILI
INGREDIENTS

  • 1 can (10 ounces) red enchilada sauce*
  • 1 can (14.5 ounces) petite diced tomatoes with green chilies**
  • 1 can (15 ounces) chili beans in mild chili sauce
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 can (15 ounces) corn drained
  • 1 and 1/2 pounds’ boneless skinless chicken breasts ~2-3 large breasts
  • 2 cups chicken stock or chicken broth
  • 1 package (8 ounces) cream cheese very soft

Seasonings

  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon paprika
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 1 and 1/2 tablespoons chili powder
  • Toppings: sour cream, freshly grated cheddar cheese, avocado, fresh lime and fresh cilantro

SLOW COOKER WHITE CHICKEN CHILI
INGREDIENTS

  • 1 lb. boneless skinless chicken breasts trimmed of excess fat
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 24 oz. chicken broth (low sodium)
  • 2 15oz cans great Northern beans drained and rinsed
  • 2 4oz cans diced green chilies (I do one hot, one mild)
  • 1 15oz can whole kernel corn drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • small handful fresh cilantro chopped
  • 4 oz. reduced fat cream cheese softened
  • 1/4 cup half and half

TOPPINGS:

  • sliced jalapenos
  • sliced avocados
  • dollop of sour cream
  • minced fresh cilantro
  • tortilla strips
  • shredded Monterey jack or Mexican cheese
