Mealtime Monday: Easy Pie Recipes

Tomorrow is National Pie Day and there’s no better way to celebrate than by baking a pie with your family. Whether you bake a fruit pie or a chocolate pie, you’re bound to have just as much fun baking it as you will eating it. 

PEANUT BUTTER PIE
INGREDIENTS
For the Crust:

  • 14 whole chocolate graham crackers
  • 1 tablespoon light brown sugar
  • 7 tablespoons (3.5 ounces) unsalted butter, melted

For the Filling:

  • 8 ounces cream cheese (room temperature)
  • 3/4 cup powdered sugar plus 2 tablespoons, divided
  • 1 cup creamy peanut butter
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract

For the Topping:

  • Melted peanut butter
  • Melted chocolate
  • Mini Reese’s cups
  • Peanut butter chips

FRENCH SILK PIE
INGREDIENTS
Whipped Cream (makes about 5 cups):

  • 2 1/2cups heavy whipping cream
  • 4tablespoons granulated sugar
  • 1teaspoon vanilla

Chocolate Mousse Layer:

  • 4 ounces unsweetened chocolate
  • 8 ounces cream cheese softened
  • 2 cups powdered sugar
  • 3 cups whipped cream

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 5 butter melted
  • 2 granulated sugar

Toppings:

  • 2 cups whipped cream
  • Chocolate curls

APPLE PIE
INGREDIENTS

  • 4 tbsp. butter
  • 2 1/2 lbs. apples, peeled, cored and sliced
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 2 tbsp. freshly squeezed lemon juice
  • 1 tbsp. cornstarch
  • 1 egg

Pie crust dough

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 cup (2 sticks) butter
  • 1/3 cup cold water
