Mealtime Monday: Peanut Butter And Jelly

Today is National Peanut Butter and Jelly Day and we’re ready to celebrate! These delicious PB&J-themed foods put a fun twist on the beloved classic. Try them out and let us know if they taste half as good as they look!

PB&J CUPS
INGREDIENTS

  • 1 pound Peanut Butter
  • 1 1/2 tablespoons honey or maple syrup
  • 1/2 cup coconut oil, melted
  • teaspoon salt (only add if the peanut butter is unsalted)
  • 1/4 to 1/2 cup jam or jelly
  • Paper cupcake liners
  • Muffin tin

PB&J OVERNIGHT OATS
INGREGIENTS

  • 1 very ripe banana
  • 1 cup almond milk
  • 4 tbsp. peanut butter
  • pinch salt if peanut butter is unsalted
  • 1 1/4 cup rolled oats
  • 1/8 cup. chia seeds
  • 1/2 cup 100% concord grape juice

PB&J DOUGHNUTS
INGREGIENTS

  • 2 packages (1/4 ounce each) active dry yeast
  • 1/4 cup warm water (110° to 115°)
  • 3/4 cup warm full-fat milk (110° to 115°)
  • 5 tablespoons unsalted butter, at room temperature
  • 1/3 cup granulated sugar, plus more for rolling the doughnuts in
  • 1 egg yolk + 1 egg, at room temperature
  • 1 teaspoon salt
  • 3 and 3/4 cups all-purpose flour
  • 1/4 cup jelly
  • 1/4 cup JIF Creamy Peanut Butter
  • 1 egg white, lightly beaten
  • 2 cups Crisco Vegetable Oil, for frying
