Mealtime Monday: It’s National Picnic Day!

Today is National Picnic Day so get packing! Picnic’s are not only a delightful way to spend time outdoors but they’re also the perfect reason to get the family together and try something new. Have each of your kids pick a special treat to include in your basket. While you can pack just about anything, here are some of our favorite picnic dishes. 

 

 

MEDITERRANEAN PASTA SALAD

INGREDIENTS

  • 12 ounces dry pasta
  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 2/3 cup sliced Kalamata olives
  • 4 ounces crumbled feta cheese
  • half of a medium red onion, peeled and thinly sliced
  • lemon-herb vinaigrette (see below) 

Lemon-Herb Vinaigrette:

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

PRESSED ITALIAN SANDWICHES

INGREDIENTS

  • 1 Ciabatta Baguette cut in half to make approx. two 12-inch pieces
  • 2-3 Tbsp. butter
  • 3 red peppers
  • 1 large bunch of arugula, rinsed and patted dry rinsed and patted dry
  • 2 cups bocconcini slices
  • 10 oz. Assorted Italian deli meats
  • Balsamic Vinegar
  • Olive Oil
  • Salt and Pepper, to taste

OLD-FASHIONED LEMON BARS

INGREDIENTS

  • 4 large Eggs Beaten
  • 2 C. Sugar
  • 1/3 C. Lemon Juice
  • 1 tsp Vanilla
  • 1/4 C + 1 Tbsp. Flour

Crust:

  • 2 C. Flour
  • 3/4 C Powdered Sugar
  • 1 C. Soft Butter
