Mealtime Monday: Celebrating Cinco De Mayo

Cinco De Mayo is in less than a week and it gives us a good excuse for a fun celebration. While going to restaurants is always fun, we’ve found some delicious Mexican-themed recipes that make cooking on May 5, and every other day of the year, worth it. Check them out below!

5-INGREDIENT SLOW COOKER STEAK FAJITAS
INGREDIENTS

  • 2 lbs. beef, sliced
  • 1-2 bell peppers, sliced
  • 1 onion, sliced
  • 20 ounces salsa
  • 2 tbsp. fajita seasoning

MEXICAN STREET CORN SALAD
INGREDIENTS

  • 2 14 bags of frozen corn
  • 1 olive oil
  • 1/4cup mayonnaise
  • 8 cotija cheese crumbled
  • 1/2jalapeno diced, seeds removed
  • 1/2cup finely chopped cilantro
  • dash of cayenne pepper
  • 3cloves of garlic minced
  • juice of one lime
  • sea salt
  • Pinch of smoked paprika
  • Pinch of chili powder

SALSA VERDE CHICKEN ENCHILADAS
INGREDIENTS
For the Chicken:

  • 1 lb. boneless skinless chicken breasts or thighs, (or pre-cooked shredded chicken)
  • 1 tbsp. olive oil
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1/2 tsp coarse sea salt
  • Juice of 1/2 lime

For the Enchiladas:

  • 1 batch Homemade Tomatillo Salsa Verde or 2 cans store-bought salsa verde
  • 10 corn tortillas, soft flour tortillas can also be used
  • 2 cups shredded Mexican cheese
  • Diced tomatoes,for topping (optional)
  • Chopped cilantro,for topping (optional)
  • Chopped green onions,for topping (optional)
