Mealtime Monday: Brunch Recipes Kids Can Make For Mother's Day

Mother’s Day is right around the corner and on this special day, we’re celebrating YOU. We rounded up some easy brunch recipes your little ones can make for you (with a little help from another trusted adult) so you can relax and enjoy!

SIMPLE STRAWBERRY SMOOTHIE
INGREDIENTS

  • 1 banana
  • 1 cup strawberries
  • 1/2 cup vanilla yogurt
  • 1/2 cup milk
  • 2 tsp honey
  • 1 pinch of cinnamon
  • 1 cup of ice

AVOCADO TOAST
INGREDIENTS

  • 1 avocado peeled and seeded
  • 2 tablespoons chopped cilantro
  • juice of 1/2 lime
  • 1/2 teaspoon red pepper flakes optional
  • salt & pepper to taste
  • 2 slices whole grain bread or bread of choice
  • 2 eggs fried, scrambled, or poached, optional

SCRAMBLED EGGS BREAKFAST MUFFIN
INGREDIENTS

  • 12 eggs
  • 1/2 teaspoon seasoned salt
  • 2-3 tablespoons onion, diced
  • 1 cup cooked ham, diced (could also use cooked bacon or cooked sausage)
  • pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 cup red bell pepper, diced
  • 1/4 cup fresh mushrooms, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup baby spinach, finely shredded
