SAVORY TREATS

Stuffed Jack-O-Lanterns

We absolutely loved this recipe from ItsYummi.com. Make sure to head to their website for even more delicious recipes, and tips on how you can spice up your Stuffed Jack-O-Lanterns!

INGREDIENTS: 4 large bell peppers, 1 cup of cooked rice or brown rice, 1 Tbsp of avocado oil, 1lb lean ground beef, 1 medium yellow onion, 8 oz. mushrooms, 2 cups roasted red pepper sauce, 1 Tsp dried Italian seasoning, ¼ Tsp red pepper flakes, and salt/pepper to taste.

INSTRUCTIONS:

  • Heat oven to 350 degrees F.
  • Use a knife to slice off the top off each bell pepper horizontally. Set aside tops (do not discard) and remove all seeds and insides. Rinse and pat the peppers until dry.
  • Cut holes into the exterior of the peppers to resemble a Jack-O-Lantern face.
  • Cook rice according to package directions. As the rice cooks, lightly grease a small sheet pan and arrange the peppers and tops on the pan.
  • Cook the peppers for 20-25 minutes, or until peppers are cooked yet firm.
  • While peppers are cooling, heat oil over a skillet on medium and add your chopped onion and mushrooms to the pan. Sauté for 3-4 minutes or until they have softened and reduced in size.
  • Increase heat to medium high and add ground meat and spices into the pan. Continue to cook, stirring occasionally, until no pink remains.
  • Drain excess grease from pan, reduce heat to medium low, then add red pepper pasta sauce and cooked rice. Stir to combine and cook for 2-3 more minutes, or until mixture is heated thoroughly.
  • Prior to serving, fill each pepper with approximately 1 cup of mixture, over filling each pepper slightly. Place a top onto each stuffed pepper and serve!

  • For mini pizzas: using a 4-5” circular cutter or mug, cut out 6-8 circles of dough and place on the prepared baking sheet.
  • Brush the dough with marinara sauce to cover, leaving ¼-inch around the edges uncovered.
  • Sprinkle your shredded cheese on top.
  • Slice 3-4 olives lengthwise into halve to make the spider bodies. Then slice 3-4 more halves widthwise to make legs. Finally, cut several olive tips to make heads.
